Arugula Salad with Vinaigrette
|

2 cups all-purpose flour 1 Tbs baking powder 1/2 tsp salt 1 cup buttermilk 1 cup grated Cheddar cheese
1 3/4 cups all purpose flour 1 1/2 cups sugar 1 tsp salt 2 very ripe bananas, mashed (1 cup) 1/4 cup plus 1 T buttermilk 1 cup chopped nuts
In another bowl, combine eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts. Pour into greased 9 x 5 x 3 baking pan. Bake at 325° for 1 hour and 20 minutes or until bread tests done. Remove from pan and cool on wire rack. Makes 1 loaf. Does not double well.
(Easy) Makes 6 servings
32 oz creamed corn 6 oz corn muffin mix 2 eggs, beaten 1/2 C butter, melted
Mix all ingredients and pour into a greased 2-quart casserole dish. Bake for 45 minutes at 350F.
3 cups all purpose flour 3 eggs, beaten 2 cups sugar 1 cup vegetable oil 1 tsp. baking soda 2 cups mashed ripe bananas (about 5) 1 tsp. ground cinnamon 2 tsp. vanilla extract ¾ tsp. salt 1 can (8 oz.) crushed pineapple, drained 2 cup chopped pecans or walnuts
Preheat oven to 350 degrees. Ina a large bowl, combine the flour, sugar, baking soda cinnamon, and salt; mix well. In a separate bowl, combine the remaining ingredients, mix will. Pour the wet mixture into the dry mixture. Stirring until the dry ingredients are moistened. Spoon into 2 greased and floured 8x4 loaf pans. Bake for about 1 ½ hrs or until a wooden toothpick inserted in the center of the loaf comes out clean. Cool in pans for 10 minutes, remove from pans and let cool on wire reacks. (In Hawaii - you an substitute macadamia nuts!)
2 (10 oz) pkg. frozen strawberries (thawed and not drained) 4 eggs 1 ¼ cup vegetable oil 3 cups flour 1 tsp. baking soda 1 tsp. salt 3 tsp. cinnamon 2 cups sugar 1 ¼ cups chopped pecans
Chop strawberries slightly, and mix in eggs, and oil. In separate bowl, combine all the dry ingredients. Then slowly mix the dry ingredients into the wet ones. Pour into 2 greased 9x5 loaf pans. Bake at 350 degrees for approximately 1 hr. Cool. Can drizzle some thinned cream cheese icing on top or sprinkle powdered confectioners sugar! Enjoy!
(Granny Dillman’s Recipe) (Easy) Makes 20-24 rolls
3 1/2 C flour 2 1/4 tsp yeast 1/4 C sugar 2 tsp. Salt 1/2 C oil (shortening) 1/3 C powdered milk 1 1/2 C warm water
Mix dry ingredients. Add oil and water; mix well. Cover with plastic; let rise until double in size. Make rolls and place in muffin pan. Let rise until double in size. Bake at 350°F.
(Makes 2 loaves)
1/2 cup oil 1 cup sugar 1 cup grated unpeeled zucchini 1-1/2 teaspoons cinnamon 1/4 teaspoon baking powder
Add grated zucchini and mix well. Combine flour, cinnamon, baking soda, and baking powder and gradually add to zucchini batter. Add nuts, if desired, and mix well. Pour batter into 2 greased 8 x 4-inch loaf pans. Bake at 325 degrees 1 hour or toothpick inserted into top comes out clean.
Arugula Salad and Ultimate Vinaigrette (Easy) Makes 4 servings
1 shallot, finely minced 1 tsp. Dijon mustard 2 tsp. red wine vinegar 1/2 C olive oil 1 tsp. sugar 1 tsp. honey Salt and pepper 6 C arugula
Combine all ingredients except arugula in a jar and shake to emulsify. Toss arugula with vinaigrette and serve.
(Easy) Makes 4 servings
1 C mayonnaise 1/4 C sugar 2 T vinegar 2 oz raisins 1 pkg broccoli slaw
Combine all ingredients and mix well. Serve cold.
2-4 Cups of shredded cabbage 1-2 pks sliced almonds (4 oz.) 2 T sesame seeds 1 bunch green onions 2 pks chicken ramen noodles 1 T salt 1 T pepper 2 C cooked chicken 2-3 T rice vinegar 1/2 C oil 2 T sugar
Combine cabbage, onions, salt, pepper and sugar. Set aside or you can chill.
brown almonds and sesame seeds in oil. Add vinegar carefully. Sprinkle seasoning packet over cabbage mixture, then break apart the ramen noodles and mix in as well. Toss all this together and chicken, cubed, or cut as you like, then pour hot dressing mixture over and mix well.
My alterations: i just buy a bag of the pre shredded cabbage the 3 color kind and just dump it all. If i want to make a really huge batch, then i buy two bags and use 1 and a half. Sometimes i increase the hot mixture because of using more cabbage. Sometimes i want it a little bit more vinegary so i just add some more of the rice vinegar, and i use the spiced or seasoned rice vinegar as well. i always add more almonds. But ususally cut down on the onions amount. If it is around for awhile it gets strong to me. my friend Kathy doesn't even use chicken in hers.
(Everything is chopped/shredded)
